Established in 2011, Hinomaru is humbled to be the first ramenya of Astoria. Hinomaru 日の丸 loosely translates to the “circle of the sun". We specialize in seven regional Japanese ramen, from Sapporo in the north to Kagoshima in the south.
Our name sake "The HinoMaru" is inspired from the traditional Hakata style tonkotsu ramen. While all of our broths are 100% house-made, the tonkotsu pork bone broth has the distinction of being our signature craft. It is cooked for 17 hours, then reduced at decreasing temperatures to release its complex bone marrow flavors. The preparation is traditional and authentic. No shortcuts.
For many ramen lovers, the tonkotsu broth represents a ramenya’s dedication to the craft and is the benchmark for which a ramenya is judged on, so we take this preparation very seriously. The Hinomaru broth’s soy base is also special because it is aged since we had started serving the residents of Astoria in 2011.
We source most of our meats from our trusted neighborhood butcher. Our ramens are topped with the freshest ingredients. This may include a combination of scallions, bean sprouts, cabbage, mushrooms, leeks, corn and much more. Our all-time customer favorite topping is the poached egg. You can choose any number of different toppings to suit your palette.
We are blushing. Michelin did award our Team the Michelin Bib Gourmand award every year since we began serving the residents of Astoria. We have been featured on Food Network.!
